Chicken Noodle Soup With Thyme
Ingredients
- 3 pounds chicken pieces (skin removed)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 onion, chopped
- 1 cup celery, washed and chopped
- 1 large carrot, scrubbed and thinly sliced
- 4 cups dry noodles
- thyme or sage (optional)
Method
- 1 Thaw chicken in refrigerator or microwave. Place chicken in a large kettle and cover completely with water.
- 2 Bring to a boil, then reduce heat and simmer for 2-3 hours until chicken is cooked.
- 3 Remove chicken from broth. Cool for 10-15 minutes, then separate meat from bones. Remove any bones from the broth.
- 4 Skim fat from the broth using a spoon, ice cubes, or paper towels.
- 5 Return chicken meat, salt, pepper, onion, celery, and carrot to the broth. Bring to a boil, then reduce heat and cook for 15-20 minutes until carrots are tender.
- 6 Add noodles and boil uncovered for 6-7 minutes, stirring occasionally. Ladle into bowls and serve.
