Chicken Noodle Soup With Thyme

Ingredients

  • 3 pounds chicken pieces (skin removed)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 onion, chopped
  • 1 cup celery, washed and chopped
  • 1 large carrot, scrubbed and thinly sliced
  • 4 cups dry noodles
  • thyme or sage (optional)

Method

  1. 1 Thaw chicken in refrigerator or microwave. Place chicken in a large kettle and cover completely with water.
  2. 2 Bring to a boil, then reduce heat and simmer for 2-3 hours until chicken is cooked.
  3. 3 Remove chicken from broth. Cool for 10-15 minutes, then separate meat from bones. Remove any bones from the broth.
  4. 4 Skim fat from the broth using a spoon, ice cubes, or paper towels.
  5. 5 Return chicken meat, salt, pepper, onion, celery, and carrot to the broth. Bring to a boil, then reduce heat and cook for 15-20 minutes until carrots are tender.
  6. 6 Add noodles and boil uncovered for 6-7 minutes, stirring occasionally. Ladle into bowls and serve.
