Chicken Noodle Soup With Parsley
Ingredients
- 4 lb chicken, cut into serving pieces
- 2½ quarts water
- 2½ tsp salt
- 3 cups cooked noodles
- 1 tsp peppercorns
- 1 small onion, sliced
- 1 carrot, sliced
- 1 bay leaf
- 1 tbsp chopped parsley
- Salt and pepper to taste
Method
- 1 Place chicken pieces in a large pot with 2½ quarts water and 2½ tsp salt. Bring to a boil, then reduce heat and simmer for 2½ hours, adding water as needed to keep chicken submerged.
- 2 Remove chicken and skim fat from the broth. Return broth to the pot and add peppercorns, sliced onion, sliced carrot, bay leaf, and chopped parsley. Bring to a boil.
- 3 Add the cooked noodles to the boiling broth. Cook for 20 minutes. Season with additional salt and pepper to taste before serving.
