Chicken Noodle Soup With Parsley

Ingredients

  • 4 lb chicken, cut into serving pieces
  • 2½ quarts water
  • 2½ tsp salt
  • 3 cups cooked noodles
  • 1 tsp peppercorns
  • 1 small onion, sliced
  • 1 carrot, sliced
  • 1 bay leaf
  • 1 tbsp chopped parsley
  • Salt and pepper to taste

Method

  1. 1 Place chicken pieces in a large pot with 2½ quarts water and 2½ tsp salt. Bring to a boil, then reduce heat and simmer for 2½ hours, adding water as needed to keep chicken submerged.
  2. 2 Remove chicken and skim fat from the broth. Return broth to the pot and add peppercorns, sliced onion, sliced carrot, bay leaf, and chopped parsley. Bring to a boil.
  3. 3 Add the cooked noodles to the boiling broth. Cook for 20 minutes. Season with additional salt and pepper to taste before serving.
