Chicken Milanese With Mushroom Sauce
Ingredients
- 1 chicken breast, sliced thin
- Salt and pepper
- Beaten eggs
- Fine bread crumbs
- Butter for sautéing
- Lemon wedges
- Olive oil
- Dry mushrooms
- Grated cheese
- Bread crumbs
- Small pieces of butter
- Brown stock or broth
- Lemon juice
Method
- 1 Season thin chicken breast slices with salt and pepper. Dip in beaten eggs and let sit for a few hours.
- 2 Coat the egg-dipped chicken slices in fine bread crumbs.
- 3 Sauté the breaded chicken slices in butter until browned.
- 4 For the sauce, layer olive oil, dry mushrooms, grated cheese, and bread crumbs in a pan. Repeat 3-4 times.
- 5 Season the layers with olive oil, salt, pepper, and small butter pieces. Heat until boiling.
- 6 Add brown stock and lemon juice to the pan. Pour the sauce over the browned chicken and serve with lemon.
