Chicken Marsala With Sherry

Ingredients

  • 1 whole chicken, cut into large pieces
  • 1 medium onion, chopped
  • 1 piece of butter
  • Salt and pepper to taste
  • Broth
  • 1 glass Sherry or Marsala wine

Method

  1. 1 Place chicken pieces, chopped onion, and butter in a saucepan. Season with salt and pepper.
  2. 2 Brown the chicken well over heat.
  3. 3 Add broth and continue cooking until the chicken is done.
  4. 4 Remove excess fat from the sauce by straining through a sieve.
  5. 5 Return the chicken to the sauce with the Sherry or Marsala wine. Remove from heat as soon as the sauce begins to boil.
