Chicken Marsala With Sherry
Ingredients
- 1 whole chicken, cut into large pieces
- 1 medium onion, chopped
- 1 piece of butter
- Salt and pepper to taste
- Broth
- 1 glass Sherry or Marsala wine
Method
- 1 Place chicken pieces, chopped onion, and butter in a saucepan. Season with salt and pepper.
- 2 Brown the chicken well over heat.
- 3 Add broth and continue cooking until the chicken is done.
- 4 Remove excess fat from the sauce by straining through a sieve.
- 5 Return the chicken to the sauce with the Sherry or Marsala wine. Remove from heat as soon as the sauce begins to boil.
