Chicken Marengo With Tomatoes
Ingredients
- 1 chicken
- 1 pint chicken stock
- 3 tomatoes
- 1 piece carrot
- 1 piece turnip
- 1 piece onion
- 1 sprig parsley
- 1 sprig thyme
- 1 sprig marjoram
- 2 oz butter
- 1 oz flour
- few drops lemon juice
Method
- 1 Cut chicken into joints and fry in butter until browned. Remove chicken from pan.
- 2 Fry carrot, turnip, onion, parsley, thyme, and marjoram in the same butter.
- 3 Add flour to vegetables and fry briefly to make a roux.
- 4 Pour in stock, stir, and boil for three minutes.
- 5 Return chicken and sliced tomatoes to the pan. Simmer for 30 minutes until tender.
- 6 Transfer chicken to a serving dish. Add lemon juice to gravy, strain, and pour over chicken.
