Chicken Marengo With Tomatoes

Ingredients

  • 1 chicken
  • 1 pint chicken stock
  • 3 tomatoes
  • 1 piece carrot
  • 1 piece turnip
  • 1 piece onion
  • 1 sprig parsley
  • 1 sprig thyme
  • 1 sprig marjoram
  • 2 oz butter
  • 1 oz flour
  • few drops lemon juice

Method

  1. 1 Cut chicken into joints and fry in butter until browned. Remove chicken from pan.
  2. 2 Fry carrot, turnip, onion, parsley, thyme, and marjoram in the same butter.
  3. 3 Add flour to vegetables and fry briefly to make a roux.
  4. 4 Pour in stock, stir, and boil for three minutes.
  5. 5 Return chicken and sliced tomatoes to the pan. Simmer for 30 minutes until tender.
  6. 6 Transfer chicken to a serving dish. Add lemon juice to gravy, strain, and pour over chicken.
