Chicken Liver Pâté

Chicken Liver Pâté

Ingredients

  • 1/2 onion, chopped
  • 1 tbsp butter
  • 5-6 chicken livers
  • 1 cup chicken stock
  • Salt to taste
  • Paprika to taste
  • Mustard to taste
  • Dash of curry powder (optional)

Method

  1. 1 Sauté chopped onion in butter until delicately browned.
  2. 2 Add chicken livers and sauté on both sides.
  3. 3 Cover with seasoned chicken stock and simmer until livers are tender.
  4. 4 Mash livers fine, press through a sieve, and season with salt, paprika, mustard, or curry powder.
  5. 5 Press mixture into a cup, pour melted butter over the top, and chill until set.
  6. 6 Remove butter layer and spread onto bread to prepare sandwiches.
