Chicken Liver Pâté
Ingredients
- 1/2 onion, chopped
- 1 tbsp butter
- 5-6 chicken livers
- 1 cup chicken stock
- Salt to taste
- Paprika to taste
- Mustard to taste
- Dash of curry powder (optional)
Method
- 1 Sauté chopped onion in butter until delicately browned.
- 2 Add chicken livers and sauté on both sides.
- 3 Cover with seasoned chicken stock and simmer until livers are tender.
- 4 Mash livers fine, press through a sieve, and season with salt, paprika, mustard, or curry powder.
- 5 Press mixture into a cup, pour melted butter over the top, and chill until set.
- 6 Remove butter layer and spread onto bread to prepare sandwiches.
