Chicken Hominy Soup

Ingredients

  • 8 cups water
  • 1 whole chicken, skinned and cut into pieces
  • 1/4 cup onion, chopped
  • 1/4 teaspoon pepper
  • 8 cans chili powder
  • 1/2 cup tomato sauce
  • 1/2 teaspoon dried oregano
  • 2 cans white or yellow hominy (15 ounce each), rinsed and drained
  • 3 cups iceberg lettuce, shredded
  • 6 lime wedges

Method

  1. 1 Place chicken pieces in a large pot and cover with 8 cups of water. Simmer over medium heat for 1 hour.
  2. 2 Add chopped onion, pepper, chili powder, tomato sauce, and oregano to the simmering chicken.
  3. 3 Remove chicken from the pot once thoroughly cooked. Remove most bones from the meat and discard.
  4. 4 Return the deboned chicken to the pot.
  5. 5 Add rinsed hominy to the pot and simmer for another 45 minutes.
  6. 6 Serve hot with shredded lettuce and lime wedges.
