Chicken Hominy Soup
Ingredients
- 8 cups water
- 1 whole chicken, skinned and cut into pieces
- 1/4 cup onion, chopped
- 1/4 teaspoon pepper
- 8 cans chili powder
- 1/2 cup tomato sauce
- 1/2 teaspoon dried oregano
- 2 cans white or yellow hominy (15 ounce each), rinsed and drained
- 3 cups iceberg lettuce, shredded
- 6 lime wedges
Method
- 1 Place chicken pieces in a large pot and cover with 8 cups of water. Simmer over medium heat for 1 hour.
- 2 Add chopped onion, pepper, chili powder, tomato sauce, and oregano to the simmering chicken.
- 3 Remove chicken from the pot once thoroughly cooked. Remove most bones from the meat and discard.
- 4 Return the deboned chicken to the pot.
- 5 Add rinsed hominy to the pot and simmer for another 45 minutes.
- 6 Serve hot with shredded lettuce and lime wedges.
