Chicken Ham And Great Northern Bean Soup
Ingredients
- 3 cups Great Northern beans, dry
- 3 cups water (for soaking)
- 1/2 cup chopped onion
- 1/2 pound chicken, thawed, cut up, skin removed
- 4 ounces ham, chopped
- 2 tablespoons vegetable oil
- 8 cups water
- 1 cup diced tomatoes (or 8 ounces low-sodium diced tomatoes)
- 1 tablespoon distilled white vinegar
Method
- 1 Soak beans in 3 cups of water overnight. Drain and rinse.
- 2 In a large pot, brown onion, chicken, and ham in oil over medium-high heat for 5 minutes.
- 3 Add 8 cups water, beans, and salt. Bring to a boil, then cook for 5 minutes.
- 4 Lower heat and simmer for 1 hour, stirring every 15 minutes.
- 5 Add tomatoes and vinegar. Cook over low heat for 20 minutes. Serve hot.
