Chicken Gumbo With Okra
Ingredients
- 1 chicken, cut for stewing
- Fat for browning
- 2 quarts water
- 4 onions
- 1 bay leaf
- 2 cloves garlic
- Cornstarch, for thickening
- Red pepper and salt to taste
- 2 tablespoons finely chopped parsley
- 0.5 teaspoon thyme
- 1 tablespoon file powder (gumbo powder)
- 2 cups cooked okra
- Boiled rice, for serving
Method
- 1 Clean and cut the chicken. Brown it quickly in hot fat in a deep saucepan.
- 2 Add water, onions, bay leaf, and cloves. Cook until the chicken is tender.
- 3 Thicken the liquid slightly with cornstarch. Season with red pepper and salt.
- 4 Stir in parsley, thyme, file powder, and cooked okra. Heat through.
- 5 Serve immediately with plenty of boiled rice.
