Chicken Gumbo With Okra

Ingredients

  • 1 chicken, cut for stewing
  • Fat for browning
  • 2 quarts water
  • 4 onions
  • 1 bay leaf
  • 2 cloves garlic
  • Cornstarch, for thickening
  • Red pepper and salt to taste
  • 2 tablespoons finely chopped parsley
  • 0.5 teaspoon thyme
  • 1 tablespoon file powder (gumbo powder)
  • 2 cups cooked okra
  • Boiled rice, for serving

Method

  1. 1 Clean and cut the chicken. Brown it quickly in hot fat in a deep saucepan.
  2. 2 Add water, onions, bay leaf, and cloves. Cook until the chicken is tender.
  3. 3 Thicken the liquid slightly with cornstarch. Season with red pepper and salt.
  4. 4 Stir in parsley, thyme, file powder, and cooked okra. Heat through.
  5. 5 Serve immediately with plenty of boiled rice.
