Chicken Greek Salad With Yogurt Dressing
Ingredients
- 1/2 cup Greek yogurt, fat-free
- 2 teaspoons lemon juice
- 2 teaspoons olive oil
- 1 clove garlic
- 1 teaspoon oregano
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 head romaine lettuce
- 1/2 cup cherry tomatoes, cut in half
- 1 cucumber, diced
- 1/4 cup red onion, sliced
- 1/4 cup black olives, cut in half
- 1 cup cooked chicken breast, cubed
- 1/4 cup feta cheese, crumbled
Method
- 1 Whisk together Greek yogurt, lemon juice, olive oil, minced garlic, oregano, salt, and pepper in a small bowl.
- 2 Cover and refrigerate the dressing for at least 1 hour to allow flavors to meld.
- 3 Wash and tear the romaine lettuce into bite-sized pieces and place in a large salad bowl.
- 4 Add cherry tomatoes, diced cucumber, sliced red onion, black olives, and cubed chicken to the lettuce.
- 5 Sprinkle crumbled feta cheese over the salad, top with the chilled yogurt dressing, and serve.
