Chicken Fricassee With Salt Pork And Sherry
Ingredients
- 1 chicken, cut into 11 pieces
- 2 tbsp butter or drippings
- 1 bouquet of herbs
- Salt and pepper to taste
- 3 slices salt pork
- Boiling water
- 1 tbsp butter
- 2 tbsp flour
- 1 cup chicken broth
- 1 cup cream or milk
- 2-3 egg yolks
- 1 tbsp sherry (optional)
- ½ can mushrooms (optional)
- Rice or toast for serving
Method
- 1 Brown chicken pieces in butter in a saucepan. Add boiling water, herbs, salt, pepper, and salt pork. Simmer until tender.
- 2 Remove chicken and keep warm. Strain cooking liquid and skim off fat.
- 3 Make a white roux with 1 tbsp butter and 2 tbsp flour. Slowly whisk in 1 cup of the strained broth.
- 4 Season sauce to taste. Remove from heat, cool slightly, then whisk in cream and beaten egg yolks.
- 5 Return sauce to low heat until thickened, ensuring it does not boil. Pour over chicken and serve with rice or toast.
