Chicken Fricassee With Rice

Ingredients

  • 1 chicken, cut up
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 teaspoon onion juice (optional)
  • 1 tablespoon flour
  • 1 tablespoon finely chopped parsley
  • Hot boiled rice, for serving

Method

  1. 1 Pat chicken pieces into a saucepan with enough boiling water to cover. Add salt, pepper, and onion juice if using.
  2. 2 Boil slowly for 2 hours or until tender, adding water as needed to keep covered. You should have about 2 cups of stock.
  3. 3 Thicken the stock with flour mixed with a little cold water. Stir in chopped parsley.
  4. 4 Serve the chicken in a border of hot boiled rice.
