Chicken Fricassee With Rice
Ingredients
- 1 chicken, cut up
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 1 teaspoon onion juice (optional)
- 1 tablespoon flour
- 1 tablespoon finely chopped parsley
- Hot boiled rice, for serving
Method
- 1 Pat chicken pieces into a saucepan with enough boiling water to cover. Add salt, pepper, and onion juice if using.
- 2 Boil slowly for 2 hours or until tender, adding water as needed to keep covered. You should have about 2 cups of stock.
- 3 Thicken the stock with flour mixed with a little cold water. Stir in chopped parsley.
- 4 Serve the chicken in a border of hot boiled rice.
