Chicken Fricassee With Biscuits

  • 4 cups flour
  • 4 teaspoons baking powder
  • 1 pinch salt
  • ½ cup butter
  • milk, as needed
  • 2 whole chickens, cleaned and cut up
  • water, to cover
  • salt and pepper
  • flour, for thickening
  • butter, for thickening

Method

  1. 1 Sift 4 cups flour, 4 teaspoons baking powder, and a pinch of salt together.
  2. 2 Work ½ cup butter into the flour mixture, then add enough milk to form a soft dough.
  3. 3 Roll out the dough, cut into biscuits, and bake until done.
  4. 4 Cook the chickens in water to cover, seasoned with salt and pepper, until very tender.
  5. 5 Thicken the cooking liquid by stirring in flour cooked in butter.
  6. 6 Split the baked biscuits, arrange on a serving platter, and pour the chicken and sauce over them.
