Chicken Fricassee With Biscuits
Ingredients
- 4 cups flour
- 4 teaspoons baking powder
- 1 pinch salt
- ½ cup butter
- milk, as needed
- 2 whole chickens, cleaned and cut up
- water, to cover
- salt and pepper
- flour, for thickening
- butter, for thickening
Method
- 1 Sift 4 cups flour, 4 teaspoons baking powder, and a pinch of salt together.
- 2 Work ½ cup butter into the flour mixture, then add enough milk to form a soft dough.
- 3 Roll out the dough, cut into biscuits, and bake until done.
- 4 Cook the chickens in water to cover, seasoned with salt and pepper, until very tender.
- 5 Thicken the cooking liquid by stirring in flour cooked in butter.
- 6 Split the baked biscuits, arrange on a serving platter, and pour the chicken and sauce over them.
