Chicken Chow Mein With Noodles

Ingredients

  • 1 pound fresh pork, white meat chicken, lobster, or crab meat, cut into 1-inch strips
  • 2 tablespoons cooking fat
  • 1 cup water or stock
  • 1 teaspoon cornstarch
  • 1 onion, cut into very fine pieces
  • 2 tablespoons fat
  • 1 bunch celery, cut into 2-inch strips
  • ¼ pound dried mushrooms, soaked 2 hours in cold water, drained, and sliced
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • Few grains cayenne pepper
  • Fried noodles
  • ½ pound bean sprouts (optional)
  • Soy sauce, for serving
  • Boiled rice, for serving (optional)

Method

  1. 1 Cut meat into 1-inch strips and cook in a frying pan with 2 tablespoons fat for 5 minutes.
  2. 2 Mix water or stock with cornstarch, add to meat, and simmer for 3 minutes until meat is tender.
  3. 3 In another pan, cook onion in 2 tablespoons fat for 3 minutes. Add celery and sliced mushrooms, cooking for 3 minutes while stirring constantly.
  4. 4 Combine meat and vegetable mixtures. Season with salt, pepper, and cayenne.
  5. 5 Pour the mixture over fried noodles. Serve with soy sauce and boiled rice if desired.
