Chicken Chow Mein With Noodles
Ingredients
- 1 pound fresh pork, white meat chicken, lobster, or crab meat, cut into 1-inch strips
- 2 tablespoons cooking fat
- 1 cup water or stock
- 1 teaspoon cornstarch
- 1 onion, cut into very fine pieces
- 2 tablespoons fat
- 1 bunch celery, cut into 2-inch strips
- ¼ pound dried mushrooms, soaked 2 hours in cold water, drained, and sliced
- 1 teaspoon salt
- ¼ teaspoon pepper
- Few grains cayenne pepper
- Fried noodles
- ½ pound bean sprouts (optional)
- Soy sauce, for serving
- Boiled rice, for serving (optional)
Method
- 1 Cut meat into 1-inch strips and cook in a frying pan with 2 tablespoons fat for 5 minutes.
- 2 Mix water or stock with cornstarch, add to meat, and simmer for 3 minutes until meat is tender.
- 3 In another pan, cook onion in 2 tablespoons fat for 3 minutes. Add celery and sliced mushrooms, cooking for 3 minutes while stirring constantly.
- 4 Combine meat and vegetable mixtures. Season with salt, pepper, and cayenne.
- 5 Pour the mixture over fried noodles. Serve with soy sauce and boiled rice if desired.
