Chicken Chop Suey

Ingredients

  • 1 pound white meat chicken, pork, veal, crab, or lobster, cut into 1-inch strips
  • 2 tablespoons chicken fat or other fat
  • 1 cup celery, thinly sliced crosswise
  • 1 onion, peeled and thinly sliced
  • 6 mushroom caps, peeled and sliced
  • 6 Chinese water chestnuts, peeled and sliced
  • 2 tablespoons chicken fat or butter
  • ½ pound bean sprouts
  • ¼ pound bamboo shoots, cut into diamond-shaped pieces
  • 1 teaspoon soy sauce
  • 2 cups chicken stock or water
  • Salt to taste
  • Few grains of pepper

Method

  1. 1 Cut meat into 1-inch strips and cook in 2 tablespoons fat for 5 minutes in a frying pan. Remove and set aside.
  2. 2 In the same pan, cook celery, onion, mushrooms, and water chestnuts in 2 tablespoons fat for 5 minutes.
  3. 3 Add bean sprouts, bamboo shoots, soy sauce, stock, and the cooked meat. Simmer gently until meat and sprouts are cooked through.
  4. 4 Season with salt and pepper to taste. Serve immediately.
