Chicken Chop Suey
Ingredients
- 1 pound white meat chicken, pork, veal, crab, or lobster, cut into 1-inch strips
- 2 tablespoons chicken fat or other fat
- 1 cup celery, thinly sliced crosswise
- 1 onion, peeled and thinly sliced
- 6 mushroom caps, peeled and sliced
- 6 Chinese water chestnuts, peeled and sliced
- 2 tablespoons chicken fat or butter
- ½ pound bean sprouts
- ¼ pound bamboo shoots, cut into diamond-shaped pieces
- 1 teaspoon soy sauce
- 2 cups chicken stock or water
- Salt to taste
- Few grains of pepper
Method
- 1 Cut meat into 1-inch strips and cook in 2 tablespoons fat for 5 minutes in a frying pan. Remove and set aside.
- 2 In the same pan, cook celery, onion, mushrooms, and water chestnuts in 2 tablespoons fat for 5 minutes.
- 3 Add bean sprouts, bamboo shoots, soy sauce, stock, and the cooked meat. Simmer gently until meat and sprouts are cooked through.
- 4 Season with salt and pepper to taste. Serve immediately.
