Chicken Cacciatore With Green Peppers

Ingredients

  • 1 large onion
  • 1 chicken, cut into pieces
  • flour
  • salt
  • pepper
  • 1 pint fresh or canned tomatoes
  • 6 sweet green peppers

Method

  1. 1 Chop the onion and soak in cold water for 30 minutes. Drain, dry, and brown the onion in a pan; set aside.
  2. 2 Sprinkle chicken pieces with flour, salt, and pepper. Sauté in the pan fat until browned.
  3. 3 Add tomatoes, green peppers, and the browned onion to the pan.
  4. 4 Cover tightly and simmer until the chicken is very tender, adding hot water if needed to prevent burning.
