Chicken Cacciatore With Green Peppers
Ingredients
- 1 large onion
- 1 chicken, cut into pieces
- flour
- salt
- pepper
- 1 pint fresh or canned tomatoes
- 6 sweet green peppers
Method
- 1 Chop the onion and soak in cold water for 30 minutes. Drain, dry, and brown the onion in a pan; set aside.
- 2 Sprinkle chicken pieces with flour, salt, and pepper. Sauté in the pan fat until browned.
- 3 Add tomatoes, green peppers, and the browned onion to the pan.
- 4 Cover tightly and simmer until the chicken is very tender, adding hot water if needed to prevent burning.
