Chicken Brown Rice Salad
Ingredients
- 2 cups lettuce
- 2 cups cooked brown rice
- 1 skinless roasted chicken breast
- 1 tomato, cored and diced
- 1 green pepper, cored and diced
- 1 tablespoon olive oil
- 2 tablespoons lemon juice
- hot pepper sauce (optional)
- Italian herb mix (optional)
- black pepper to taste (optional)
Method
- 1 Toss lettuce, cooked brown rice, diced chicken, tomato, and green pepper together in a large salad bowl.
- 2 Drizzle with olive oil and lemon juice. Add hot pepper sauce, Italian herb mix, and black pepper to taste.
- 3 Serve immediately on a large plate, optionally sprinkling extra seasonings on top for presentation.
