Chicken Brown Rice Salad

Ingredients

  • 2 cups lettuce
  • 2 cups cooked brown rice
  • 1 skinless roasted chicken breast
  • 1 tomato, cored and diced
  • 1 green pepper, cored and diced
  • 1 tablespoon olive oil
  • 2 tablespoons lemon juice
  • hot pepper sauce (optional)
  • Italian herb mix (optional)
  • black pepper to taste (optional)

Method

  1. 1 Toss lettuce, cooked brown rice, diced chicken, tomato, and green pepper together in a large salad bowl.
