Chicken Broth Split Pea Soup

Ingredients

  • 2 teaspoons vegetable oil
  • 2 cups chopped onion
  • 1 1/2 cups small potatoes, diced with skin on
  • 4 cups yellow split peas
  • 5 1/2 cups chicken broth, low-sodium
  • 1 cup water
  • 1/2 teaspoon onion powder
  • 1 teaspoon poultry seasoning

Method

  1. 1 Heat vegetable oil in a large soup pot or Dutch oven over medium-high heat.
  2. 2 Add chopped onion and sauté until golden, about 2-3 minutes.
  3. 3 Add remaining ingredients and mix well. Bring to a boil.
  4. 4 Reduce heat to a simmer and cook uncovered until peas are tender, about 45 minutes. Serve hot.
