Chicken Broth Split Pea Soup
Ingredients
- 2 teaspoons vegetable oil
- 2 cups chopped onion
- 1 1/2 cups small potatoes, diced with skin on
- 4 cups yellow split peas
- 5 1/2 cups chicken broth, low-sodium
- 1 cup water
- 1/2 teaspoon onion powder
- 1 teaspoon poultry seasoning
Method
- 1 Heat vegetable oil in a large soup pot or Dutch oven over medium-high heat.
- 2 Add chopped onion and sauté until golden, about 2-3 minutes.
- 3 Add remaining ingredients and mix well. Bring to a boil.
- 4 Reduce heat to a simmer and cook uncovered until peas are tender, about 45 minutes. Serve hot.
