Chicken Broccoli Rice Casserole
Ingredients
- 1 cup uncooked rice
- 10 ounce package frozen broccoli
- 3 cups cooked chicken
- 2 tablespoons margarine or butter
- 1/4 cup flour
- 2 cups chicken broth
- 1/4 cup Parmesan cheese (optional)
Method
- 1 Cook rice in 2 cups of water according to package directions.
- 2 Let broccoli thaw.
- 3 Shred or chop the cooked chicken, ensuring it is off the bone.
- 4 Melt margarine in a large saucepan. Add flour and stir to combine.
- 5 Slowly whisk in chicken broth until smooth and thickened.
- 6 Stir in Parmesan cheese, then add rice, broccoli, and chicken. Mix well.
- 7 Transfer to a casserole dish and bake at 350°F for 30 minutes until heated through.
