Chicken Broccoli Bread Pudding

Ingredients

  • 6 cups bread, cubed
  • 1 1/2 cups broccoli, frozen, chopped and cooked
  • 1 cup cheddar cheese, low-fat, shredded
  • 1 tablespoon onion, minced (optional)
  • 1 cup chicken, skinless, diced, cooked
  • 3 eggs
  • 2 egg whites
  • 1 cup milk, non-fat

Method

  1. 1 Grease a 9x9 inch baking pan. Place half of the cubed bread in the bottom of the pan.
  2. 2 Layer the broccoli, cheese, onion, and diced chicken over the bread.
  3. 3 Top with the remaining bread.
  4. 4 In a bowl, whisk together the eggs, egg whites, and milk.
  5. 5 Pour the egg mixture evenly over the bread in the pan.
  6. 6 Cover and refrigerate for at least 1 hour or overnight.
  7. 7 Bake uncovered at 325°F for 1 to 1 1/4 hours, until the center is firm and lightly browned.
