Ingredients

  • 2 red apples, cored and chopped
  • 2 celery stalks, diced
  • 2 cups cooked skinless chicken breast, diced
  • 1/2 cup plain non-fat Greek yogurt
  • 1/4 cup raisins
  • 1/4 teaspoon mayonnaise
  • 1/8 teaspoon salt
  • 16 cracks ground black pepper
  • Lettuce leaves for serving

Method

  1. 1 Core and chop the apples into small pieces. Dice the celery stalks.
  2. 2 In a medium bowl, combine the chopped apples, celery, diced chicken, Greek yogurt, raisins, mayonnaise, salt, and pepper. Mix well.
