Chicken Apple And Celery Salad
Ingredients
- 2 red apples, cored and chopped
- 2 celery stalks, diced
- 2 cups cooked skinless chicken breast, diced
- 1/2 cup plain non-fat Greek yogurt
- 1/4 cup raisins
- 1/4 teaspoon mayonnaise
- 1/8 teaspoon salt
- 16 cracks ground black pepper
- Lettuce leaves for serving
Method
- 1 Core and chop the apples into small pieces. Dice the celery stalks.
- 2 In a medium bowl, combine the chopped apples, celery, diced chicken, Greek yogurt, raisins, mayonnaise, salt, and pepper. Mix well.
- 3 Arrange lettuce leaves on serving plates. Top with the apple and chicken salad mixture.
