Chicken And White Bean Salad
Ingredients
- 1 cup skinless cooked chicken, diced
- 1 can (15.5 oz) low-sodium white beans, drained and rinsed
- 1 cucumber, peeled and diced
- 1/4 cup red or white onion, chopped
- 2 tablespoons vegetable oil
- 1/4 cup lemon juice
- 1 tablespoon dried basil or parsley
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Method
- 1 Combine diced chicken, drained white beans, cucumber, and chopped onion in a large bowl.
- 2 Whisk together vegetable oil, lemon juice, dried herbs, salt, and pepper.
- 3 Pour dressing over salad and gently toss to combine.
- 4 Serve immediately or refrigerate for up to 2 days.
