Chicken And Vegetable Stew
Ingredients
- 1 lb chicken pieces (breasts or legs)
- 2 cups water
- 1 small garlic clove, minced
- 1 medium onion, chopped
- 1 1/2 teaspoons salt
- 3 teaspoons pepper
- 1 medium tomato, chopped
- 1 tablespoon parsley, chopped
- 2 stalks celery, finely chopped
- 2 medium potatoes, peeled and chopped
- 2 medium carrots, chopped
- bay leaves
Method
- 1 Remove skin and excess fat from chicken. In a large skillet, combine chicken, water, garlic, onion, salt, pepper, tomatoes, and parsley. Cover tightly and cook over low heat for 25 minutes.
- 2 Add celery, potatoes, carrots, and bay leaves. Continue cooking for 15 minutes or until chicken and vegetables are tender. Remove bay leaves before serving.
