  • 2 oz butter
  • 1 head celery, sliced
  • Carrots, sliced
  • Onions, sliced
  • Leeks, sliced
  • Turnips, sliced
  • Clear chicken broth
  • Pieces of cold chicken
  • Toast, cut into strips

Method

  1. 1 Cut carrots, onions, leeks, turnips, and celery into thin strips of equal size.
  2. 2 Melt butter in a saucepan over low heat. Add vegetables and toss for a few minutes.
  3. 3 Pour in chicken broth and add pieces of cold chicken. Bring to a boil.
  4. 4 Simmer until vegetables are tender. Serve in a tureen with toast strips.
