Chicken And Vegetable Julienne Soup
Ingredients
- 2 oz butter
- 1 head celery, sliced
- Carrots, sliced
- Onions, sliced
- Leeks, sliced
- Turnips, sliced
- Clear chicken broth
- Pieces of cold chicken
- Toast, cut into strips
Method
- 1 Cut carrots, onions, leeks, turnips, and celery into thin strips of equal size.
- 2 Melt butter in a saucepan over low heat. Add vegetables and toss for a few minutes.
- 3 Pour in chicken broth and add pieces of cold chicken. Bring to a boil.
- 4 Simmer until vegetables are tender. Serve in a tureen with toast strips.
