Chicken And Tomato Pilaf
Ingredients
- 1 cup rice
- 2 cups stock
- ½ can tomato
- ¼ white onion
- Butter
- Salt
- Pepper
- Chicken (jointed and parboiled, or sliced cold cooked chicken/turkey)
- 1 oz butter
Method
- 1 Soak rice in cold water for 1 hour, then drain.
- 2 Place rice, stock, and quartered onion in a double boiler. Stew until rice absorbs the stock.
- 3 Stew the tomato thoroughly and season with butter, salt, and pepper.
- 4 Mix the seasoned tomato into the cooked rice.
- 5 Sauté chicken pieces in butter until lightly browned.
- 6 Make a hole in the center of the rice mound, place chicken and 1 oz butter inside, and stew together for 20 minutes.
- 7 Serve on a platter in a smooth mound with the red rice surrounding the fowl.
