Chicken And Tomato Pilaf

Ingredients

  • 1 cup rice
  • 2 cups stock
  • ½ can tomato
  • ¼ white onion
  • Butter
  • Salt
  • Pepper
  • Chicken (jointed and parboiled, or sliced cold cooked chicken/turkey)
  • 1 oz butter

Method

  1. 1 Soak rice in cold water for 1 hour, then drain.
  2. 2 Place rice, stock, and quartered onion in a double boiler. Stew until rice absorbs the stock.
  3. 3 Stew the tomato thoroughly and season with butter, salt, and pepper.
  4. 4 Mix the seasoned tomato into the cooked rice.
  5. 5 Sauté chicken pieces in butter until lightly browned.
  6. 6 Make a hole in the center of the rice mound, place chicken and 1 oz butter inside, and stew together for 20 minutes.
  7. 7 Serve on a platter in a smooth mound with the red rice surrounding the fowl.
