Chicken And Rice With Parsley Sauce

Ingredients

  • 2 cups rice
  • 1 whole chicken, cut into joints
  • 1 quart water (for rice)
  • 2 teaspoons salt (for rice)
  • Additional water (for chicken)
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 1 egg yolk, beaten
  • Chopped parsley

Method

  1. 1 Soak and wash the rice until clean. Boil in a quart of boiling water with 2 teaspoons salt for about 30 minutes.
  2. 2 Drain the rice thoroughly and place it in the bottom of a serving dish.
  3. 3 Simmer the chicken pieces in water just enough to cover until cooked through. Remove chicken and place over the rice.
  4. 4 In the chicken cooking liquid, rub butter with flour and stir over heat for 2 minutes to thicken.
  5. 5 Remove from heat, stir in beaten egg yolk and chopped parsley, then immediately pour the sauce over the chicken.
