Chicken And Rice With Parsley Sauce
Ingredients
- 2 cups rice
- 1 whole chicken, cut into joints
- 1 quart water (for rice)
- 2 teaspoons salt (for rice)
- Additional water (for chicken)
- 1 tablespoon butter
- 1 tablespoon flour
- 1 egg yolk, beaten
- Chopped parsley
Method
- 1 Soak and wash the rice until clean. Boil in a quart of boiling water with 2 teaspoons salt for about 30 minutes.
- 2 Drain the rice thoroughly and place it in the bottom of a serving dish.
- 3 Simmer the chicken pieces in water just enough to cover until cooked through. Remove chicken and place over the rice.
- 4 In the chicken cooking liquid, rub butter with flour and stir over heat for 2 minutes to thicken.
- 5 Remove from heat, stir in beaten egg yolk and chopped parsley, then immediately pour the sauce over the chicken.
