Ingredients

  • 1 fowl, cut into joints
  • ¼ cup olive oil
  • Salt, to taste
  • 1-2 red chillies, chopped
  • 1 onion, chopped
  • 4 tomatoes, cut in quarters
  • 3 cups rice, well washed
  • Small quantity of broth
  • Parsley, chopped

Method

  1. 1 Wipe chicken joints dry and trim neatly. Heat olive oil in a stewpan.
  2. 2 Add chicken to hot oil, stirring and turning until golden brown. Sprinkle with salt.
  3. 3 Add chopped onions and chillies; fry together with the chicken.
  4. 4 Mix in quartered tomatoes and washed rice. Pour in a small amount of broth.
  5. 5 Stew until rice is cooked and broth is absorbed. Garnish with parsley and serve uncovered.
