Chicken And Rice Stew
Ingredients
- 1 fowl, cut into joints
- ¼ cup olive oil
- Salt, to taste
- 1-2 red chillies, chopped
- 1 onion, chopped
- 4 tomatoes, cut in quarters
- 3 cups rice, well washed
- Small quantity of broth
- Parsley, chopped
Method
- 1 Wipe chicken joints dry and trim neatly. Heat olive oil in a stewpan.
- 2 Add chicken to hot oil, stirring and turning until golden brown. Sprinkle with salt.
- 3 Add chopped onions and chillies; fry together with the chicken.
- 4 Mix in quartered tomatoes and washed rice. Pour in a small amount of broth.
- 5 Stew until rice is cooked and broth is absorbed. Garnish with parsley and serve uncovered.
