Chicken And Rice Soup With Kale

Ingredients

  • 1/2 cup vegetable oil
  • 1/2 cup chopped onion
  • 1 teaspoon chopped carrot
  • 2 teaspoons ground thyme
  • 2 minced garlic cloves
  • 3/4 cup water or chicken broth
  • 1 cup diced tomatoes
  • 1/2 cup cooked, skinned, cubed chicken
  • 1 cup cooked brown or white rice
  • 1 large leaf chopped kale

Method

  1. 1 Heat oil in a medium saucepan. Add onion and carrot; sauté until tender, about 5-8 minutes.
  2. 2 Add thyme and garlic; sauté for one more minute.
  3. 3 Add water or broth, tomatoes, cooked rice, chicken, and kale.
  4. 4 Simmer for 5-10 minutes.
