  • 2 tablespoons vegetable oil
  • 1 whole chicken, cut up, skin removed
  • 1 green pepper, chopped
  • 3 onions, chopped
  • 2 garlic cloves, minced
  • 2 1/4 cups tomatoes, chopped
  • 1 cup chicken broth (low-sodium)
  • 1 bay leaf
  • 1 cup uncooked rice
  • Salt and pepper to taste
  • Peas

Method

  1. 1 Heat oil in a large skillet and brown chicken on both sides.
  2. 2 Add green pepper, onion, and garlic; cook for 5 minutes.
  3. 3 Add tomatoes, broth, bay leaf, salt, and pepper.
