Chicken And Rice Skillet
Ingredients
- 2 tablespoons vegetable oil
- 1 whole chicken, cut up, skin removed
- 1 green pepper, chopped
- 3 onions, chopped
- 2 garlic cloves, minced
- 2 1/4 cups tomatoes, chopped
- 1 cup chicken broth (low-sodium)
- 1 bay leaf
- 1 cup uncooked rice
- Salt and pepper to taste
- Peas
Method
- 1 Heat oil in a large skillet and brown chicken on both sides.
- 2 Add green pepper, onion, and garlic; cook for 5 minutes.
- 3 Add tomatoes, broth, bay leaf, salt, and pepper.
- 4 Cover and cook for 20 minutes.
- 5 Add rice, stir, cover, and simmer 20-30 minutes until liquid is absorbed and chicken is tender.
- 6 Add peas and cook until hot.
