Chicken And Potato Gnocchi
Ingredients
- 2 cups boiled mealy potatoes, mashed
- 1 cup cooked chicken or turkey breast, ground
- ½ cup grated Parmesan or Swiss cheese
- 2 egg yolks
- salt to taste
- pinch of nutmeg
- flour for dusting and rolling
Method
- 1 Mash the boiled potatoes and mix with ground chicken, grated cheese, egg yolks, salt, and nutmeg.
- 2 Turn the mixture onto a floured board and knead in enough flour to form a soft paste.
- 3 Roll the dough into sticks about the thickness of a small finger, then cut into half-inch pieces.
- 4 Drop the gnocchi into boiling water and cook for 5 to 6 minutes until they float.
