Chicken And Potato Gnocchi

Ingredients

  • 2 cups boiled mealy potatoes, mashed
  • 1 cup cooked chicken or turkey breast, ground
  • ½ cup grated Parmesan or Swiss cheese
  • 2 egg yolks
  • salt to taste
  • pinch of nutmeg
  • flour for dusting and rolling

Method

  1. 1 Mash the boiled potatoes and mix with ground chicken, grated cheese, egg yolks, salt, and nutmeg.
  2. 2 Turn the mixture onto a floured board and knead in enough flour to form a soft paste.
  3. 3 Roll the dough into sticks about the thickness of a small finger, then cut into half-inch pieces.
  4. 4 Drop the gnocchi into boiling water and cook for 5 to 6 minutes until they float.
