Chicken And Oyster Pot Pie
Ingredients
- 1 stewing chicken
- 1 pint oysters
- ¼ lb butter
- Salt and pepper
- A little flour
- Pastry crust
Method
- 1 Stew the chicken until tender. Drain, reserving the liquid.
- 2 Season the chicken with ¼ lb butter, salt, and pepper. Line a deep dish with pastry crust.
- 3 Place the chicken in the crust-lined dish. Cover loosely with a top crust, cutting a hole the size of a teacup in the center.
- 4 In a separate pan, heat the oyster liquor with a little flour and water. Add oysters, salt, pepper, and 2 tablespoons butter. Boil briefly.
- 5 Bake the pie. Twenty minutes before done, lift the top crust and pour the hot oyster mixture into the center.
