Chicken And Onion Enchiladas
Ingredients
- 1 cup flour
- 1/4 cup cornflour
- 1 teaspoon salt
- 1 tablespoon shortening
- water
- 2 ounces grated cheese
- 2 onions
- 2 tablespoons shortening
- 1/2 cup finely chopped cold meat, preferably chicken
- 2 tablespoons chili sauce
Method
- 1 Sift flour, cornflour, salt, and shortening. Add water to make a dough.
- 2 Break dough into walnut-sized pieces. Roll very thin.
- 3 Bake on a griddle or fry in a pan with shortening. Keep warm on a clean towel.
- 4 Cook onions in 2 tablespoons shortening until tender. Mix with cheese, chopped meat, and chili sauce.
- 5 Spread mixture on tortillas. Roll or fold, then pour hot chili sauce over them.
