Chicken And Macaroni Creole Stew
Ingredients
- 1 young chicken, cut up
- Salt and pepper
- Hot fat for frying
- 2 thinly sliced onions
- Flour for dredging
- 1 cup white stock
- 1 cup stewed and strained tomatoes
- 1 tablespoon tarragon vinegar
- 1 cup cooked and broken macaroni
- Parsley for garnish
Method
- 1 Season chicken with salt and pepper. Fry brown in hot fat with sliced onions.
- 2 Dredge chicken with flour. Add white stock and strained tomatoes. Cook until thickened, stirring constantly.
- 3 Simmer chicken in sauce until tender, adding more stock if needed.
- 4 Stir in tarragon vinegar, salt, pepper, and cooked macaroni. Serve hot with parsley garnish.
