Chicken And Egg Pot Pie

Ingredients

  • 1 whole chicken
  • Rich biscuit dough
  • Butter
  • Salt
  • Pepper
  • 2 hard-boiled eggs
  • Potatoes (for potato balls)
  • Chicken cooking liquid
  • 1 egg white

Method

  1. 1 Boil the chicken until tender. Cool it, then remove the meat from the bones and chop it.
  2. 2 Line a buttered baking dish with half of the biscuit dough. Season the chicken with salt, pepper, and butter, then place half in the dish.
  3. 3 Add a layer of sliced hard-boiled eggs, followed by the remaining chicken. Add boiled potato balls if desired.
  4. 4 Pour in enough chicken cooking liquid to fill the dish. Cover with the remaining biscuit crust, leaving a hole in the center for steam.
  5. 5 Brush the crust with beaten egg white. Bake at 350°F for at least 30 minutes until golden.
