Chicken and Dumplings

Ingredients

  • 2 tablespoons all-purpose flour
  • 2 tablespoons water
  • 1 cup low-sodium chicken broth
  • 1 cup cooked diced chicken
  • 1/4 teaspoon salt (optional)
  • 1 dash black pepper
  • 1/3 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons non-fat milk

Method

  1. 1 Mix 2 tablespoons flour and water in a pan until smooth. Stir in broth and cook over medium heat until thickened.
  2. 2 Add chicken, salt, and pepper to the thickened broth.
  3. 3 Combine 1/3 cup flour, baking powder, and salt in a bowl. Stir in milk until a dough forms.
  4. 4 Drop spoonfuls of dough onto the gently boiling chicken mixture to make 4 dumplings.
  5. 5 Cover tightly and cook slowly for 15 minutes without lifting the lid.
