Chicken and Dumplings
Ingredients
- 2 tablespoons all-purpose flour
- 2 tablespoons water
- 1 cup low-sodium chicken broth
- 1 cup cooked diced chicken
- 1/4 teaspoon salt (optional)
- 1 dash black pepper
- 1/3 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 tablespoons non-fat milk
Method
- 1 Mix 2 tablespoons flour and water in a pan until smooth. Stir in broth and cook over medium heat until thickened.
- 2 Add chicken, salt, and pepper to the thickened broth.
- 3 Combine 1/3 cup flour, baking powder, and salt in a bowl. Stir in milk until a dough forms.
- 4 Drop spoonfuls of dough onto the gently boiling chicken mixture to make 4 dumplings.
- 5 Cover tightly and cook slowly for 15 minutes without lifting the lid.
