Chicken And Dumpling Soup

Ingredients

  • 1 chicken, cut into joints
  • 1 cup milk
  • 1 egg
  • Salt and pepper to taste
  • Flour, for dumplings
  • Parsley, chopped
  • Thickening agent (e.g., cornstarch slurry)
  • Chopped celery (optional)
  • Fresh corn kernels (optional)

Method

  1. 1 Place chicken joints in a pot and cover with water. Bring to a boil and simmer for 1 hour until the chicken is cooked through.
  2. 2 While the chicken cooks, mix milk, egg, salt, and enough flour to create a stiff dough. Stir until smooth.
  3. 3 Drop spoonfuls of the dumpling mixture into the boiling soup. Add chopped celery or fresh corn kernels if desired.
  4. 4 Thicken the soup with a slurry if needed. Season with salt, pepper, and parsley. Simmer for a few more minutes until dumplings are cooked.
  5. 5 Serve hot in a tureen.
