Chicken And Dumpling Soup
Ingredients
- 1 chicken, cut into joints
- 1 cup milk
- 1 egg
- Salt and pepper to taste
- Flour, for dumplings
- Parsley, chopped
- Thickening agent (e.g., cornstarch slurry)
- Chopped celery (optional)
- Fresh corn kernels (optional)
Method
- 1 Place chicken joints in a pot and cover with water. Bring to a boil and simmer for 1 hour until the chicken is cooked through.
- 2 While the chicken cooks, mix milk, egg, salt, and enough flour to create a stiff dough. Stir until smooth.
- 3 Drop spoonfuls of the dumpling mixture into the boiling soup. Add chopped celery or fresh corn kernels if desired.
- 4 Thicken the soup with a slurry if needed. Season with salt, pepper, and parsley. Simmer for a few more minutes until dumplings are cooked.
- 5 Serve hot in a tureen.
