Chicken And Cheese Pupusas
Ingredients
- 16 ounces ground chicken breast
- 1 tablespoon vegetable oil
- 1/2 pound part-skim mozzarella cheese, grated
- 1 small onion, finely diced
- 1 garlic clove, minced
- 1 medium green pepper, seeded and minced
- 1 small tomato, finely chopped
- 1/2 teaspoon salt
- 5 cups masa harina
- 6 cups water
Method
- 1 Sauté chicken in oil over low heat until white, stirring constantly to prevent sticking.
- 2 Add onion, garlic, green pepper, and tomato. Cook until chicken is done. Remove from heat and refrigerate to cool.
- 3 While filling cools, mix masa harina with enough water to form a stiff, tortilla-like dough.
- 4 Once cooled, mix the grated cheese into the chicken filling.
- 5 Divide dough into 24 balls. Flatten each into a circle, add filling, seal edges, and flatten to 1/2-inch thick discs.
- 6 Cook pupusas in a very hot iron skillet until golden brown on both sides. Serve hot.
