Chicken And Bean Stew
Ingredients
- 1 can kidney beans (15 ounce)
- 1 clove garlic
- 1 medium onion
- 5-6 medium chicken thighs
- 1 can tomato sauce (8 ounces)
- 1/4 cup vinegar
- 1 teaspoon sugar
- salt and pepper to taste
Method
- 1 Drain and rinse the kidney beans.
- 2 Crush the garlic and dice the onion.
- 3 Dice the chicken thighs into bite-sized pieces.
- 4 In a large pot, cook the chicken until half done.
- 5 Add tomato sauce, vinegar, onion, garlic, sugar, salt, and pepper.
- 6 Simmer for 30-40 minutes until chicken is tender.
- 7 Add kidney beans and simmer for 5-10 more minutes.
