Chicken And Bean Sprout Egg Foo Young
Ingredients
- 2 eggs
- 1/2 cup fresh bean sprouts
- 1/3 cup cooked diced chicken or beef
- 1 tablespoon dried minced onion
- 2 teaspoons drained mushrooms, stems and pieces
- 1/2 cup water
- 2 teaspoons low-sodium soy sauce
- 2 teaspoons cornstarch
- Oil for frying
Method
- 1 Beat eggs until thick and light, about 5 minutes. Fold in bean sprouts, chicken or beef, mushrooms, and onion.
- 2 Heat oil in a frying pan over moderate heat. Pour egg mixture by half-cupfuls into the pan.
- 3 Brown patties on one side, turn, and brown the other side. Keep warm while preparing the sauce.
- 4 Mix water, soy sauce, and cornstarch in a small saucepan until smooth. Cook over low heat, stirring constantly, until thickened.
- 5 Serve the thickened sauce over the egg patties.
