Chicken And Bean Chili

Ingredients

  • 3 pounds chicken pieces, skin removed
  • 2 cups chopped tomatoes
  • 1 minced garlic clove
  • 1/2 cup chopped onion
  • 1/4 cup canned diced mild chiles
  • 2 cups canned pinto or garbanzo beans, drained
  • salt and pepper to taste

Method

  1. 1 Place chicken pieces in a large saucepan and add enough water to cover. Cook until tender, about 25 minutes.
  2. 2 Remove chicken from broth. Add tomatoes, garlic, onion, and chiles to the broth.
  3. 3 Remove meat from bones and return meat to broth. Add beans and season with salt and pepper.
  4. 4 Simmer for about 15 minutes before serving.
