Chicken And Bean Chili
Ingredients
- 3 pounds chicken pieces, skin removed
- 2 cups chopped tomatoes
- 1 minced garlic clove
- 1/2 cup chopped onion
- 1/4 cup canned diced mild chiles
- 2 cups canned pinto or garbanzo beans, drained
- salt and pepper to taste
Method
- 1 Place chicken pieces in a large saucepan and add enough water to cover. Cook until tender, about 25 minutes.
- 2 Remove chicken from broth. Add tomatoes, garlic, onion, and chiles to the broth.
- 3 Remove meat from bones and return meat to broth. Add beans and season with salt and pepper.
- 4 Simmer for about 15 minutes before serving.
