Chewy Raisin Oatmeal Cookies
Ingredients
- 1 cup corn syrup
- ½ cup shortening
- 1 cup raisins, chopped
- 1 tsp baking soda
- 4 tbsp cold water
- 2 cups rolled oats
- ½ cup all-purpose flour
- ½ tsp nutmeg
Method
- 1 In a saucepan, combine corn syrup, shortening, and raisins. Bring to a boil and cook for 5 minutes.
- 2 Remove from heat. Stir in baking soda dissolved in cold water, oats, flour, and nutmeg until well mixed.
- 3 Drop spoonfuls of dough onto a greased and floured baking sheet, spacing them 2 inches apart.
- 4 Bake in a hot oven (425°F) for 10 minutes. Let cool before serving.
