Chestnuts Simmered In Browned Sugar Syrup

Ingredients

  • 1 lb chestnuts
  • 1/2 lb sugar
  • 3/4 cup water
  • Vanilla extract to taste

Method

  1. 1 Boil chestnuts in plenty of water until tender but not mushy. Peel them carefully.
  2. 2 Simmer sugar and 3/4 cup water for 10 minutes to create a syrup.
  3. 3 Add peeled chestnuts to the syrup and cook gently until the syrup browns.
  4. 4 Remove from heat, stir in vanilla, and let cool slightly before serving in a glass dish.
