Chestnut Stuffing With Parsley

Ingredients

  • 1 pint large chestnuts
  • 1 cup fine rolled crackers
  • 1 tsp salt
  • 1/8 tsp pepper
  • 1 tsp chopped parsley
  • 1/3 cup melted butter

Method

  1. 1 Shell chestnuts and remove inner skin by pouring boiling water over them.
  2. 2 Boil chestnuts in salted water or stock until soft, then mash fine.
  3. 3 Mix mashed chestnuts with rolled crackers, salt, pepper, and parsley.
  4. 4 Moisten mixture with melted butter before using as stuffing.
