Chestnut Spice Fruit Cake With White Icing

Ingredients

  • 1/2 cup butter
  • 1 1/2 cups sugar
  • 3 eggs
  • 1 cup milk
  • 1/3 cup cornstarch
  • 2 cups flour
  • 1 1/2 tsp ground mixed spices
  • 3 tsp baking powder
  • 1 cup raisins, seeded and floured
  • 1 cup chopped nuts
  • 1/3 cup sweet chocolate
  • 1 tsp lemon juice
  • 1 cup boiled chestnuts, ground
  • confectioners' sugar

Method

  1. 1 Cream butter and sugar; beat in eggs for 5 minutes, then mix in milk.
  2. 2 Sift cornstarch, flour, spices, and baking powder; stir into wet ingredients.
  3. 3 Fold in raisins and nuts; pour into a greased loaf pan.
  4. 4 Bake in a moderate oven (350°F) for 45 minutes.
  5. 5 Frost with white boiled icing.
  6. 6 Melt chocolate with lemon juice and ground chestnuts; add sugar to make a paste. Shape into cats or figures and press into the icing.
