Chestnut Spice Fruit Cake With White Icing
Ingredients
- 1/2 cup butter
- 1 1/2 cups sugar
- 3 eggs
- 1 cup milk
- 1/3 cup cornstarch
- 2 cups flour
- 1 1/2 tsp ground mixed spices
- 3 tsp baking powder
- 1 cup raisins, seeded and floured
- 1 cup chopped nuts
- 1/3 cup sweet chocolate
- 1 tsp lemon juice
- 1 cup boiled chestnuts, ground
- confectioners' sugar
Method
- 1 Cream butter and sugar; beat in eggs for 5 minutes, then mix in milk.
- 2 Sift cornstarch, flour, spices, and baking powder; stir into wet ingredients.
- 3 Fold in raisins and nuts; pour into a greased loaf pan.
- 4 Bake in a moderate oven (350°F) for 45 minutes.
- 5 Frost with white boiled icing.
- 6 Melt chocolate with lemon juice and ground chestnuts; add sugar to make a paste. Shape into cats or figures and press into the icing.
