Chestnut Mousse Ring

Ingredients

  • 1 lb shelled English chestnuts
  • Vanilla extract
  • Sugar
  • Heavy cream

Method

  1. 1 Boil chestnuts for a few minutes, then drain and remove skins.
  2. 2 Boil chestnuts again until tender, drain, and mash through a purée sieve.
  3. 3 Sweeten, flavor with vanilla, and moisten with a little cream.
  4. 4 Stir the mixture in a saucepan over slow heat until dry.
  5. 5 Press through a colander or potato press onto a serving dish.
  6. 6 Form into a ring and serve with whipped cream in the center.
