Chestnut Mousse Ring
Ingredients
- 1 lb shelled English chestnuts
- Vanilla extract
- Sugar
- Heavy cream
Method
- 1 Boil chestnuts for a few minutes, then drain and remove skins.
- 2 Boil chestnuts again until tender, drain, and mash through a purée sieve.
- 3 Sweeten, flavor with vanilla, and moisten with a little cream.
- 4 Stir the mixture in a saucepan over slow heat until dry.
- 5 Press through a colander or potato press onto a serving dish.
- 6 Form into a ring and serve with whipped cream in the center.
