Chestnut Butter Cookies

Ingredients

  • 1 pound chestnuts
  • 2 eggs
  • 2 teaspoons castor sugar
  • 2 ounces butter
  • flour

Method

  1. 1 Boil chestnuts for 30 minutes, then strain.
  2. 2 Remove shells and skins, then rub chestnuts through a wire sieve.
  3. 3 Cream sugar and 2 ounces of butter together.
  4. 4 Add the chestnut puree, flour, and well-beaten eggs to the cream; stir well.
  5. 5 Grease a tin with remaining butter and shape mixture into little hills.
  6. 6 Bake in a moderate oven (350°F) for 20-30 minutes.
  7. 7 Alternatively, spread mixture thinly in the tin, bake, and stamp into shapes.
