Chestnut Butter Cookies
Ingredients
- 1 pound chestnuts
- 2 eggs
- 2 teaspoons castor sugar
- 2 ounces butter
- flour
Method
- 1 Boil chestnuts for 30 minutes, then strain.
- 2 Remove shells and skins, then rub chestnuts through a wire sieve.
- 3 Cream sugar and 2 ounces of butter together.
- 4 Add the chestnut puree, flour, and well-beaten eggs to the cream; stir well.
- 5 Grease a tin with remaining butter and shape mixture into little hills.
- 6 Bake in a moderate oven (350°F) for 20-30 minutes.
- 7 Alternatively, spread mixture thinly in the tin, bake, and stamp into shapes.
