Cherry Tomato Pasta Salad With Parmesan
Ingredients
- 6 cups cooked pasta
- 1 cup cherry tomatoes, halved
- 1/2 medium onion, finely chopped
- 3 tablespoons green pepper, finely chopped
- 1 tablespoon olive oil
- 1 tablespoon dried oregano
- 1/2 teaspoon fresh basil, chopped
- 1/2 garlic clove, minced
- 6 tablespoons grated Parmesan cheese
- Salt and pepper to taste
Method
- 1 Chop the tomatoes, onion, green pepper, and basil. Mince the garlic.
- 2 In a large bowl, combine the chopped vegetables, olive oil, oregano, garlic, salt, and pepper. Mix well.
- 3 Let the vegetable mixture stand at room temperature for 20 minutes to allow flavors to meld.
- 4 Toss the mixture with cooked pasta and top with grated Parmesan cheese before serving.
