Cherry Tartlets With Shortcrust Pastry
Ingredients
- 1 pound cherries
- ½ pound white sugar
- ½ pint water
- Short paste
Method
- 1 Place sugar and water in a stewpan over gentle heat to create a syrup.
- 2 Remove cherry stalks and add cherries to the syrup; boil gently until tender, removing scum.
- 3 Line one dozen tartlet tins with short paste and bake for ten minutes.
- 4 Fill baked shells with cherries and syrup, then finish baking until golden.
