Ingredients

  • 1 pound cherries
  • ½ pound white sugar
  • ½ pint water
  • Short paste

Method

  1. 1 Place sugar and water in a stewpan over gentle heat to create a syrup.
  2. 2 Remove cherry stalks and add cherries to the syrup; boil gently until tender, removing scum.
  3. 3 Line one dozen tartlet tins with short paste and bake for ten minutes.
  4. 4 Fill baked shells with cherries and syrup, then finish baking until golden.
