Cherry Swirl Coffee Cake

  • 2 1/2 cups sifted flour
  • 2 tablespoons baking powder
  • 1 teaspoon salt
  • 1/2 cup sugar
  • 1/2 cup shortening
  • 3/4 cup water
  • 2 pounds cherries, pitted
  • 1 cup brown sugar
  • 4 tablespoons water
  • 2 tablespoons cornstarch
  • 3 tablespoons water
  • 1/2 cup brown sugar
  • 3/4 cup boiling water

Method

  1. 1 Sift together flour, baking powder, salt, and 1/2 cup sugar.
  2. 2 Rub in 1/2 cup shortening. Mix with 3/4 cup water to form a dough.
  3. 3 Prepare filling: Cook pitted cherries, 1 cup brown sugar, and 4 tablespoons water until soft. Stir in cornstarch dissolved in 3 tablespoons water; boil 5 minutes. Cool until thick.
  4. 4 Roll dough 1/4 inch thick. Spread with cherry filling. Roll up like a jelly roll.
  5. 5 Place in a greased, floured pan. Bake at 350°F for 35 minutes, basting every 10 minutes with syrup made from 1/2 cup brown sugar and 3/4 cup boiling water.
