Cherry Nut Honey Pancakes
Ingredients
- 1 cup milk
- 2 eggs
- 1 ½ cups flour
- 2 tsp baking powder
- 2 tbsp shortening
- ½ tsp nutmeg
- ½ cup nuts, chopped fine
- 12 maraschino cherries, drained and chopped fine
- honey, for spreading
- powdered sugar, for dusting
- maraschino cherry, for garnish
Method
- 1 Whisk together milk, eggs, flour, baking powder, shortening, and nutmeg until smooth.
- 2 Prepare the topping by chopping nuts and drained cherries finely.
- 3 Pour batter into a hot pan. Sprinkle the nut and cherry mixture over the top.
- 4 Cook until set, then flip or lift. Spread with honey and dust with powdered sugar.
- 5 Roll the pancakes and garnish with a maraschino cherry.
